I'm using my old E61 without SIM (should give extended battery life for all day recording, and that big screen is unsurpassed).
Most apps ask "create WLAN connection in offline mode", but NST doesn't, and I cannot preload map data unless there's a SIM installed (even though I have WLAN specified as data bearer in NST).
If I force an open WLAN connection before starting NST (eg by registering internet telephone), NST still won't use it!
Now that my E61 is without a SIM, I see what you mean. Strange that the "Upload to service" menu item disappears altogether in offline mode. Although, I hardly expect the devs will ever get around to addressing this issue.
After a week with my new N79AE, I'm only keeping my old E61 around the house for dedicated internet calling (Gizmo, and Truphone). But in no way is that puppy coming along with me on another workout. :-) (Too much to carry.)

Keeping my E61 cos of the form factor / screen size. While I love my cute new E71, I can't cheat at the pub quiz with it in the same way - it's unusable at arms length under the table, both in terms of keyboard inpuit & reading the screen!
